Ingredients
  

For the Turkey Filling
  • 1 lb ground turkey lean
  • 1 tbsp olive oil for cooking
  • 1 small onion diced
  • 2 cloves garlic minced
  • 1 tbsp soy sauce low sodium
  • 1 tbsp lime juice freshly squeezed
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • 1 tsp salt to taste
  • 1/2 tsp black pepper to taste
For the Avocado Crema
  • 1 large avocado ripe
  • 1 tbsp lime juice freshly squeezed
  • 2 tbsp Greek yogurt or sour cream
  • 1 clove garlic minced
  • 1/4 tsp salt to taste
For Assembly
  • 1 head butter lettuce leaves separated
  • 1/4 cup cilantro chopped, for garnish
  • 1/4 cup green onions sliced, for garnish

Method
 

Prepare the Turkey Filling
  1. Heat olive oil in a skillet over medium heat. Add diced onion and saut? until translucent, about 3-4 minutes.
  2. Add minced garlic and cook for an additional minute until fragrant.
  3. Add ground turkey, soy sauce, lime juice, cumin, chili powder, salt, and pepper. Cook until the turkey is browned and cooked through, about 8-10 minutes.
Make the Avocado Crema
  1. In a blender, combine avocado, lime juice, Greek yogurt, minced garlic, and salt. Blend until smooth and creamy.
Assemble the Lettuce Cups
  1. Spoon the turkey filling into each lettuce leaf. Drizzle with avocado crema and garnish with cilantro and green onions.
  2. Serve immediately and enjoy!

Notes

These lettuce cups are best served fresh, but the turkey filling can be made ahead of time and reheated before serving.
