Gochujang Meatball Subs

Ingredients
  

Meatballs
  • 1 lb Ground beef Can substitute with ground turkey or chicken.
  • 1/2 cup Breadcrumbs Panko preferred for extra crunch.
  • 1 large Egg Acts as a binder.
  • 2 tbsp Gochujang Korean chili paste.
  • 2 cloves Garlic Minced.
  • 1 tbsp Soy sauce
  • 1 tbsp Sesame oil
  • 1 tsp Salt
  • 1/2 tsp Black pepper
Subs
  • 4 sub rolls Submarine rolls Lightly toasted.
  • 1 cup Cabbage Shredded.
  • 1 medium Carrot Julienned.
  • 1/2 cup Cilantro Chopped.
  • 1/2 cup Mayonnaise For sauce.
  • 1 tbsp Lime juice Freshly squeezed.

Method
 

Prepare Meatballs
  1. Preheat the oven to 400?F (200?C).
  2. In a mixing bowl, combine ground beef, breadcrumbs, egg, gochujang, garlic, soy sauce, sesame oil, salt, and black pepper.
  3. Mix until well combined and form into meatballs, about 1 inch in diameter.
  4. Place meatballs on a baking sheet and bake for 20-25 minutes until cooked through.
Assemble Subs
  1. In a small bowl, mix mayonnaise with lime juice to create a sauce.
  2. Slice the toasted sub rolls and spread the lime mayonnaise on both sides.
  3. Place cooked meatballs in the rolls, then top with shredded cabbage, julienned carrot, and chopped cilantro.
  4. Serve immediately and enjoy your Gochujang Meatball Subs!

Notes

Feel free to adjust the level of spiciness by adding more or less gochujang to the meatballs.
