Ingredients
  

Fish
  • 4 fillets white fish (such as cod or tilapia) skinless
Batter
  • 1 cup all-purpose flour
  • 1 cup cornmeal
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon paprika
  • 1 cup buttermilk
Oil
  • 2 cups vegetable oil for frying

Method
 

Prepare the Fish
  1. Rinse the fish fillets under cold water and pat dry with paper towels.
  2. Season the fish with salt and pepper on both sides.
Make the Batter
  1. In a mixing bowl, combine flour, cornmeal, salt, black pepper, and paprika.
  2. Dip each fish fillet into the buttermilk, then dredge in the flour mixture until fully coated.
Fry the Fish
  1. Heat vegetable oil in a frying pan over medium-high heat until hot.
  2. Carefully place the battered fish in the hot oil and fry for about 4-5 minutes on each side, or until golden brown and cooked through.
  3. Use a meat thermometer to ensure the internal temperature reaches 145?F (63?C).
Serve
  1. Remove the fried fish from the oil and place on paper towels to drain excess oil.
  2. Serve hot with lemon wedges and your favorite dipping sauce.
