Prepare the Shortcakes

- Cut in the cold butter until the mixture resembles coarse crumbs.
- Stir in the heavy cream until just combined. Do not overmix.
- Turn the dough onto a floured surface and pat into a 1-inch thick rectangle. Cut into rounds using a biscuit cutter.
- Place the rounds on a baking sheet and brush the tops with extra heavy cream.

Prepare the Blackberry Topping
- In a bowl, combine fresh blackberries, sugar, and lemon juice. Toss gently to coat and let sit for 10 minutes.
Make the Whipped Cream
- In a mixing bowl, beat heavy cream, powdered sugar, and vanilla extract until soft peaks form.
Assemble the Shortcakes
- Slice the shortcakes in half horizontally. Layer the bottom half with blackberries and a dollop of whipped cream.
- Place the top half of the shortcake on top and add more blackberries and whipped cream if desired.
