- Whisk Dry Ingredients: In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, baking powder, baking soda, and fine sea salt until thoroughly aerated.
- Mix Wet Batter: In a separate medium bowl, whisk together buttermilk, eggs, melted butter, and pure vanilla extract. Pour wet mixture into dry ingredients and stir gently with a spatula just until combined. Leave small lumps—do not overmix! Rest batter for 10 minutes to allow buttermilk and leaveners to activate.
- Prepare Cinnamon Swirl: In a small bowl, stir together melted butter, dark brown sugar, and ground cinnamon until smooth and glossy. Transfer into a small squeeze bottle or disposable piping bag and snip a small 1/8-inch tip.
- Whip Cream Cheese Glaze: In a bowl, beat softened cream cheese, butter, powdered sugar, and vanilla extract until smooth and creamy. Whisk in warm milk 1 tablespoon at a time until a smooth, pourable glaze consistency is achieved.
- Cook & Swirl Pancakes: Heat a large non-stick griddle or cast-iron skillet over medium-low heat (approx. 325°F / 165°C) and lightly grease with butter. Pour 1/3 cup of batter per pancake. As bubbles form on the surface (about 1.5 to 2 minutes), pipe a spiral of cinnamon mixture onto the batter starting from center outward.
- Flip & Caramelize: Gently slide a wide spatula underneath and flip quickly. Cook for another 1 to 2 minutes on the cinnamon side over low heat so the cinnamon sugar caramelizes without burning. Transfer to a warm plate cinnamon-side up.
- Crown & Serve: Stack pancakes warm, generously drizzle velvety cream cheese glaze over the tops and cascading down the sides, dust with a pinch of cinnamon, and serve immediately!
