Ingredients
  

Cucumbers
  • 4 cups diced cucumbers preferably pickling cucumbers
Onion
  • 1 cup finely chopped onion
Salt
  • 2 tablespoons sea salt non-iodized
Garlic
  • 2 cloves minced garlic
Sugar
  • 1 tablespoon sugar optional for sweetness
Water
  • 2 cups filtered water for brine
Spices
  • 1 teaspoon black peppercorns
  • 1 teaspoon mustard seeds
  • 1 teaspoon dill seeds

Method
 

Prepare the Vegetables
  1. Wash and dice the cucumbers into small pieces. Finely chop the onion and mince the garlic.
Mix Ingredients
  1. In a mixing bowl, combine the diced cucumbers, chopped onion, minced garlic, and sea salt. Mix well and let sit for 10 minutes to draw out moisture.
Prepare Brine
  1. In a separate container, dissolve the sugar in the filtered water. Add the black peppercorns, mustard seeds, and dill seeds.
Combine and Ferment
  1. Transfer the cucumber mixture into a fermentation jar. Pour the brine over the cucumbers, ensuring they are fully submerged. Seal the jar and leave it at room temperature for 1-2 weeks to ferment.
Store
  1. After fermentation, store the relish in the refrigerator. It can be enjoyed immediately but develops more flavor over time.
