Method
Prepare the Eggplant
- Preheat the oven to 425?F (220?C).
- Slice the eggplant into fry-shaped pieces and place them in a colander. Sprinkle with salt and let sit for 15 minutes to draw out moisture.
Coat the Fries
- Rinse the eggplant slices under cold water and pat dry with paper towels.
- Set up a dredging station with three bowls: one with flour, one with beaten eggs, and one with panko breadcrumbs mixed with garlic powder, onion powder, paprika, salt, and pepper.
- Dip each eggplant fry first in flour, then in the egg, and finally coat with the panko mixture.
Bake the Fries
- Place the coated eggplant fries on a baking sheet lined with parchment paper. Drizzle with olive oil.
- Bake in the preheated oven for 20-25 minutes, flipping halfway through, until golden brown and crispy.
Serve
- Remove from the oven and let cool slightly before serving. Enjoy with your favorite dipping sauce.
