Ingredients
  

Eggplant Fries
  • 1 large eggplant cut into fries
  • 1 cup all-purpose flour for dredging
  • 2 large eggs beaten
  • 1 cup panko breadcrumbs for extra crunch
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons olive oil for drizzling

Method
 

Prepare the Eggplant
  1. Preheat the oven to 425?F (220?C).
  2. Slice the eggplant into fry-shaped pieces and place them in a colander. Sprinkle with salt and let sit for 15 minutes to draw out moisture.
Coat the Fries
  1. Rinse the eggplant slices under cold water and pat dry with paper towels.
  2. Set up a dredging station with three bowls: one with flour, one with beaten eggs, and one with panko breadcrumbs mixed with garlic powder, onion powder, paprika, salt, and pepper.
  3. Dip each eggplant fry first in flour, then in the egg, and finally coat with the panko mixture.
Bake the Fries
  1. Place the coated eggplant fries on a baking sheet lined with parchment paper. Drizzle with olive oil.
  2. Bake in the preheated oven for 20-25 minutes, flipping halfway through, until golden brown and crispy.
Serve
  1. Remove from the oven and let cool slightly before serving. Enjoy with your favorite dipping sauce.

Notes
