Ingredients
  

Dough
  • 2 cups all-purpose flour
  • 1/2 cup unsalted butter melted
  • 1 teaspoon salt
  • 6 tablespoons cold water ice-cold is best
Filling
  • 1 pound ground beef or chicken or lentils for vegetarian version
  • 1 medium onion saut? until translucent
  • 2 cloves garlic freshly minced
  • 1 cup bell peppers any variety, red or yellow preferred
  • 1 teaspoon spices (cumin, paprika) for authentic taste
Egg Wash
  • 1 large egg yolk for brushing
  • 1 tablespoon milk or water to mix with egg yolk

Method
 

Prepare the Dough
  1. In a large bowl, combine flour and salt. Slowly mix in cold water and melted butter until a smooth dough forms. Knead gently for about 5 minutes until elastic.
Chill the Dough
  1. Wrap the dough in plastic wrap and refrigerate for at least 30 minutes.
Make the Filling
  1. Saut? onions and garlic in olive oil until translucent. Stir in your choice of ground meat or veggies, add spices, and cook until everything is well combined.
Roll Out the Dough
  1. On a floured surface, roll out the chilled dough to about ? inch thick. Use a round cutter to create circles, roughly 4-5 inches in diameter.
Fill the Empanadas
  1. Place a spoonful of filling in the center of each circle. Fold over one side to create a half-moon shape, then crimp edges with a fork to seal tightly.
Bake or Fry
  1. Preheat your oven to 375?F if baking, or heat oil in a deep pan for frying. Bake for about 20-25 minutes until golden brown or fry until crispy and cooked through?about 3-4 minutes per side.
