Ingredients
  

Salad Base
  • 2 cups edamame (shelled) cooked and cooled
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber diced
  • 1/2 cup red bell pepper diced
  • 1/4 cup red onion finely chopped
Dressing
  • 3 tablespoons olive oil
  • 2 tablespoons rice vinegar
  • 1 tablespoon soy sauce
  • 1 teaspoon sesame oil
  • 1 teaspoon honey or maple syrup for vegan option
  • 1 teaspoon ginger grated
  • 1 clove garlic minced
  • salt to taste
  • pepper to taste

Method
 

Prepare the Edamame
  1. Bring a pot of water to a boil. Add the shelled edamame and cook for about 3-5 minutes until tender. Drain and cool.
Mix the Salad
  1. In a large mixing bowl, combine the cooked edamame, cherry tomatoes, cucumber, red bell pepper, and red onion.
Make the Dressing
  1. In a small bowl, whisk together the olive oil, rice vinegar, soy sauce, sesame oil, honey, ginger, and garlic. Season with salt and pepper to taste.
Combine and Serve
  1. Pour the dressing over the salad and toss gently to combine. Serve immediately or chill in the refrigerator for 30 minutes before serving.
