Ingredients
  

Pasta Salad Base
  • 8 oz pasta (fusilli or rotini) cooked and cooled
Vegetables
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber diced
  • 1/2 cup red onion finely chopped
  • 1/2 cup bell pepper diced
Dressing
  • 1/4 cup olive oil
  • 2 tbsp red wine vinegar
  • 1 tsp Italian seasoning
  • 1 clove garlic minced
Optional Add-ins
  • 1/2 cup feta cheese crumbled
  • 1/4 cup black olives sliced

Method
 

Prepare the Pasta
  1. Cook the pasta according to package instructions. Drain and rinse under cold water until cooled.
Combine Ingredients
  1. In a large mixing bowl, combine the cooled pasta, cherry tomatoes, cucumber, red onion, and bell pepper.
Make the Dressing
  1. In a small bowl, whisk together olive oil, red wine vinegar, Italian seasoning, minced garlic, salt, and pepper.
Mix Salad
  1. Pour the dressing over the pasta salad and toss to combine. Add feta cheese and olives if desired.
Chill and Serve
  1. Refrigerate for at least 30 minutes before serving to allow flavors to meld.
