Ingredients
  

Crust
  • 1 cup graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter melted
Filling
  • 16 oz cream cheese softened
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 1/2 cup sour cream
  • 1 cup chocolate eggs chopped

Method
 

Prepare the crust
  1. Preheat the oven to 325?F (160?C). In a mixing bowl, combine graham cracker crumbs, sugar, and melted butter. Mix until well combined.
  2. Press the mixture firmly into the bottom of a 9x13 inch baking pan. Bake for 10 minutes, then remove from oven and let cool.
Make the filling
  1. In a large mixing bowl, beat the softened cream cheese until smooth. Add sugar and vanilla extract, and mix until combined.
  2. Add eggs one at a time, mixing well after each addition. Stir in sour cream and chopped chocolate eggs until evenly distributed.
Bake the cheesecake
  1. Pour the filling over the cooled crust and spread evenly. Bake for 25-30 minutes, or until the center is set and slightly jiggles.
  2. Remove from oven and let cool to room temperature, then refrigerate for at least 2 hours before cutting into bars.
