Ingredients
  

Seafood
  • 1 pound shrimp peeled and deveined
Vegetables
  • 1 cup cucumber diced
  • 1 medium red onion finely chopped
  • 1 medium tomato diced
  • 1 medium jalape?o finely chopped, optional
Herbs and Spices
  • 1/4 cup cilantro chopped
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
Citrus
  • 1/2 cup lime juice freshly squeezed
  • 1/2 cup lemon juice freshly squeezed

Method
 

Prepare the Shrimp
  1. In a mixing bowl, combine the shrimp with lime and lemon juice. Let it marinate for about 15 minutes until the shrimp turns opaque.
Mix Ingredients
  1. Add diced cucumber, red onion, tomato, jalape?o, cilantro, salt, and black pepper to the shrimp. Mix well to combine.
Serve
  1. Transfer the ceviche to a serving dish and serve chilled with tortilla chips or on its own.
