Salad Ingredients
  • 2 cups cucumbers sliced
  • 1 cup red onion thinly sliced
  • 1 cup cherry tomatoes halved
  • 1 tablespoon fresh dill chopped
Dressing Ingredients
  • 3 tablespoons olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon honey optional
  • 1 teaspoon salt to taste
  • 1/2 teaspoon black pepper freshly ground

Method
 

Prepare the Vegetables
  1. Slice the cucumbers and red onion thinly. Halve the cherry tomatoes.
Make the Dressing
  1. In a small bowl, whisk together olive oil, red wine vinegar, honey, salt, and black pepper.
Combine and Serve
  1. In a large mixing bowl, combine the cucumbers, red onion, cherry tomatoes, and dill. Pour the dressing over the salad and toss to coat.
  2. Serve immediately or refrigerate for 30 minutes to let the flavors meld.
