Ingredients

  • 3 pounds corned beef brisket with spice packet
  • 1 can Guinness beer
  • 1 large head of cabbage cut into wedges
  • 4 medium carrots peeled and cut into chunks
  • 4 medium potatoes peeled and quartered
  • 1 medium onion quartered
  • 2 cups beef broth
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder

Method
 

Preparation
  1. Place the corned beef brisket in the crock pot, fat side up.
  2. Sprinkle the spice packet over the brisket.
  3. Pour the Guinness beer and beef broth over the brisket.
  4. Add the onion, carrots, and potatoes around the brisket.
Cooking
  1. Cover and cook on low for 8 hours.
  2. Add the cabbage wedges during the last 2 hours of cooking.
Serving
  1. Remove the corned beef and let it rest for 10 minutes before slicing.
  2. Serve with the vegetables and a ladle of the cooking liquid.
