Roasted Sweet Potatoes & Bowl Base
  • 2 medium sweet potatoes peeled and diced into 1/2-inch cubes
  • 1 tbsp extra virgin olive oil for roasting

  • 1 cup sweet corn kernels charred in a hot dry skillet

  2. Bread the Chicken Bites: In a shallow bowl, mix panko breadcrumbs with smoked paprika, garlic powder, onion powder, salt, and black pepper. Dip chicken cubes into beaten egg, then press firmly into panko crumbs until thoroughly coated.
  3. Air Fry to Golden Crunch: Spray air fryer basket lightly with olive oil spray. Arrange chicken bites in a single layer without overcrowding. Air fry at 390°F (200°C) for 10 to 12 minutes, shaking at the 6-minute mark, until sizzling, deeply golden, and cooked to 165°F internally.
  4. Simmer the Hot Honey Glaze: While chicken cooks, combine honey, red pepper flakes, apple cider vinegar, and smoked paprika in a small saucepan over medium-low heat. Warm for 2 to 3 minutes until gently bubbling and infused with chili heat. Remove from heat immediately.
