Ingredients

Seasoned Pan-Seared Chicken
  • 1.25 lbs boneless skinless chicken breasts cut into 1-inch cubes
  • 1.5 tbsp extra virgin olive oil
  • 1 tsp Italian seasoning dried oregano, basil, thyme
  • 1 tsp garlic powder
  • 0.5 tsp smoked paprika
  • 0.75 tsp fine sea salt
  • 0.5 tsp freshly cracked black pepper
Potato Gnocchi & Garlic Parmesan Cream Sauce
  • 1 lb (16 oz) potato gnocchi shelf-stable or refrigerated, uncooked
  • 2 tbsp unsalted butter
  • 5 cloves garlic minced
  • 1 cup low-sodium chicken broth
  • 1 cup heavy whipping cream
  • 1 cup Parmigiano-Reggiano freshly grated
  • 3 cups baby spinach loosely packed
  • 2 tbsp fresh Italian parsley finely chopped, for garnish

Method

Instructions
  1. Season & Sear Chicken: In a medium bowl, toss chicken cubes with olive oil, Italian seasoning, garlic powder, paprika, salt, and black pepper. Heat a large deep cast iron skillet over medium-high heat. Add chicken in a single layer and sear for 3 to 4 minutes per side until golden brown and cooked through (165°F). Transfer to a plate and set aside.
  2. Sauté Garlic Aromatics: Reduce skillet heat to medium. Melt the butter and add minced garlic. Sauté for 45 to 60 seconds until fragrant and pale golden, taking care not to burn it.
  3. Simmer Gnocchi in Broth & Cream: Pour in chicken broth and heavy cream, whisking to incorporate pan fond. Bring to a gentle simmer. Add uncooked potato gnocchi straight into the skillet. Cover and simmer gently for 3 to 4 minutes until gnocchi are tender and pillowy.
  4. Melt Parmesan & Wilt Greens: Uncover the skillet and reduce heat to low. Stir in freshly grated parmesan cheese until completely melted and velvety. Add the fresh baby spinach and stir for 1 to 2 minutes until just wilted into the sauce.
  5. Recombine & Serve: Return the golden seared chicken and resting juices to the skillet, stirring gently to coat every bite in the glossy garlic parmesan sauce. Garnish with chopped parsley, freshly cracked black pepper, and shaved parmesan ribbons. Serve immediately!
