Ingredients
  

Base Ingredients
  • 4 slices bacon chopped
  • 1 medium onion diced
  • 2 stalks celery diced
  • 2 medium potatoes peeled and diced
  • 2 cans clams with juice
  • 4 cups clam broth
  • 1 cup heavy cream
  • 2 tablespoons butter
  • 1 teaspoon thyme dried
  • 1 teaspoon black pepper freshly ground
  • 1 teaspoon salt to taste

Method
 

Cooking the Base
  1. In a large pot, cook the chopped bacon over medium heat until crispy. Remove the bacon and set aside, leaving the drippings in the pot.
  2. Add the diced onion and celery to the pot, saut?ing until softened, about 5 minutes.
  3. Stir in the diced potatoes and cook for another 5 minutes.
Adding Clams and Broth
  1. Pour in the clam broth and bring to a boil. Reduce heat and simmer until potatoes are tender, about 15 minutes.
  2. Add the clams (with juice), thyme, and black pepper. Stir to combine.
Finishing Touches
  1. Stir in the heavy cream and butter, cooking until heated through. Adjust seasoning with salt if needed.
  2. Serve hot, garnished with crispy bacon if desired.

Notes

For a thicker chowder, you can mash some of the potatoes before adding the cream.
