  2. Layer Oats and Apples: In a large bowl, whisk together the rolled oats, cinnamon, nutmeg, baking powder, sea salt, and half of the chopped pecans. Scatter half of the diced apples evenly across the bottom of the prepared baking dish, then pour the oat mixture evenly over the fruit.
  3. Whisk the Maple Custard: In a medium mixing bowl, whisk together the beaten eggs, milk, maple syrup, melted butter, and vanilla extract until completely smooth and fragrant.
  4. Pour, Top, and Bake: Pour the custard mixture evenly over the oats, gently tapping the dish on the counter so the liquid saturates every oat flake. Scatter the remaining diced apples and pecans over the top, then dust lightly with brown sugar and cinnamon.
