Ingredients
  

Pasta Salad Base
  • 8 oz rotini pasta or any pasta of choice
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber diced
  • 1 cup black beans rinsed and drained
  • 1 cup corn canned or frozen
  • 1 cup bell pepper diced
  • 1/2 cup red onion finely chopped
  • 1/4 cup cilantro chopped
Dressing
  • 1/4 cup olive oil
  • 2 tbsp lime juice freshly squeezed
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1 tsp garlic powder
  • 1 tsp salt to taste
  • 1/2 tsp black pepper to taste

Method
 

Prepare the Pasta
  1. Cook the rotini pasta according to package instructions until al dente. Drain and rinse under cold water to cool.
Mix the Ingredients
  1. In a large mixing bowl, combine the cooked pasta, cherry tomatoes, cucumber, black beans, corn, bell pepper, red onion, and cilantro.
Make the Dressing
  1. In a small bowl, whisk together olive oil, lime juice, chili powder, cumin, garlic powder, salt, and black pepper until well combined.
Combine and Serve
  1. Pour the dressing over the pasta salad and toss gently to combine. Adjust seasoning if necessary. Serve chilled or at room temperature.
