Ingredients
  

Stuffing
  • 1 cup cooked rice can use white or brown rice
  • 2 cups shredded corned beef leftover or store-bought
  • 1 cup shredded cheddar cheese for topping
  • 1 tablespoon Dijon mustard
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon black pepper
Peppers
  • 4 medium bell peppers any color
Topping
  • 1 tablespoon parsley chopped, for garnish

Method
 

Prepare the Peppers
  1. Preheat the oven to 375?F (190?C). Cut the tops off the bell peppers and remove the seeds and membranes.
Make the Filling
  1. In a mixing bowl, combine the cooked rice, shredded corned beef, cheddar cheese, Dijon mustard, garlic powder, onion powder, and black pepper. Mix well.
Stuff the Peppers
  1. Stuff each bell pepper with the corned beef mixture and place them upright in a baking dish.
Bake
  1. Cover the baking dish with foil and bake for 25 minutes. Remove the foil, sprinkle additional cheese on top, and bake for another 5 minutes until the cheese is melted and bubbly.
Serve
  1. Remove from the oven, garnish with chopped parsley, and serve hot.
