Corned Beef Pot Pie

Ingredients
  

Filling
  • 2 cups corned beef shredded
  • 1 cup carrots diced
  • 1 cup potatoes diced
  • 1 cup peas fresh or frozen
  • 1 cup onion chopped
  • 2 tablespoons butter for saut?ing
  • 2 tablespoons flour for thickening
  • 1 cup beef broth
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon thyme dried
  • 1 teaspoon black pepper to taste
Crust
  • 2 cups all-purpose flour
  • 1 cup butter cold and cubed
  • 1 teaspoon salt
  • 6 tablespoons ice water more if needed

Method
 

Prepare the Filling
  1. In a skillet, melt the butter over medium heat. Add the onions, carrots, and potatoes, and saut? until softened, about 5-7 minutes.
  2. Stir in the flour and cook for an additional minute.
  3. Gradually add the beef broth, stirring constantly until the mixture thickens.
  4. Add the corned beef, peas, Worcestershire sauce, thyme, and black pepper. Mix well and remove from heat.
Make the Crust
  1. In a mixing bowl, combine the flour and salt. Cut in the cold butter until the mixture resembles coarse crumbs.
  2. Stir in the ice water, a tablespoon at a time, until the dough comes together. Divide the dough in half, shape into discs, wrap in plastic, and refrigerate for at least 30 minutes.
Assemble the Pot Pie
  1. Preheat the oven to 400?F (200?C). Roll out one disc of dough on a floured surface to fit your pie dish.
  2. Place the rolled dough in the pie dish and fill with the corned beef mixture.
  3. Roll out the second disc of dough and place it over the filling. Seal the edges and cut slits in the top to allow steam to escape.
  4. Bake in the preheated oven for 30-40 minutes, or until the crust is golden brown.
