Ingredients
  

Casserole Base
  • 2 cups shredded corned beef
  • 4 cups shredded cabbage
  • 3 cups mashed potatoes prepared from about 1.5 lbs of potatoes
  • 1 cup shredded cheddar cheese for topping
  • 1 cup beef broth
  • 1 tablespoon Dijon mustard
  • 1 teaspoon black pepper

Method
 

Prepare the Casserole
  1. Preheat the oven to 350?F (175?C).
  2. In a large pot, combine the shredded corned beef, shredded cabbage, beef broth, Dijon mustard, and black pepper. Cook over medium heat until the cabbage is tender, about 10-15 minutes.
  3. In a casserole dish, layer the corned beef and cabbage mixture, followed by a layer of mashed potatoes.
  4. Top with shredded cheddar cheese.
  5. Bake in the preheated oven for 30-40 minutes, or until the cheese is bubbly and golden.
