Ingredients
  

For the Coffee Rub
  • 2 tablespoons ground coffee preferably dark roast
  • 1 tablespoon chipotle powder or more for extra heat
  • 1 tablespoon brown sugar packed
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon cumin
  • 1 teaspoon paprika
For the Steak
  • 4 pieces ribeye steaks about 1 inch thick
  • 2 tablespoons olive oil for brushing

Method
 

Prepare the Coffee Rub
  1. In a mixing bowl, combine ground coffee, chipotle powder, brown sugar, salt, black pepper, cumin, and paprika. Mix well.
Prepare the Steaks
  1. Pat the ribeye steaks dry with paper towels. Brush both sides with olive oil.
  2. Generously apply the coffee rub to both sides of the steaks, pressing it into the meat.
Cook the Steaks
  1. Preheat the grill to medium-high heat. Once hot, place the steaks on the grill.
  2. Cook for about 4-5 minutes on each side for medium-rare, or until desired doneness is reached. Use a meat thermometer to check the internal temperature (130?F for medium-rare).
  3. Remove the steaks from the grill and let them rest for 5 minutes before slicing.
