Ingredients
  

Pudding Base
  • 1 cup coconut milk full-fat for creaminess
  • 1/4 cup chia seeds
  • 2 tablespoons maple syrup or honey for sweetness
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
Toppings
  • 1/2 cup fresh fruit such as berries or mango
  • 2 tablespoons shredded coconut unsweetened
  • 1 tablespoon nuts such as almonds or walnuts, chopped

Method
 

Prepare the Pudding
  1. In a mixing bowl, whisk together the coconut milk, chia seeds, maple syrup, vanilla extract, and salt until well combined.
  2. Cover the bowl and refrigerate for at least 4 hours or overnight to allow the chia seeds to absorb the liquid and thicken.
Serve
  1. Once the pudding has thickened, stir it well and divide it into serving bowls.
  2. Top with fresh fruit, shredded coconut, and chopped nuts as desired.
