Ingredients
  

Cake
  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsweetened cocoa powder
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 large egg
  • 1/2 cup milk
  • 1/4 cup vegetable oil
  • 1 tsp vanilla extract
  • 1/2 cup boiling water
Cherry Filling
  • 1 cup cherry pie filling
Chocolate Ganache
  • 1 cup heavy cream
  • 8 oz semi-sweet chocolate chopped

Method
 

Cake Preparation
  1. Preheat the oven to 350?F (175?C). Grease and flour a 9-inch round cake pan.
  2. In a mixing bowl, combine flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. Add egg, milk, oil, and vanilla extract to the dry ingredients and mix until smooth.
  4. Stir in boiling water until well combined. Pour batter into the prepared cake pan.
  5. Bake for 30 minutes or until a toothpick inserted in the center comes out clean. Let cool.
Assemble the Cake
  1. Once the cake has cooled, slice it in half horizontally to create two layers.
  2. Spread the cherry pie filling evenly over the bottom layer of the cake.
  3. Place the top layer back on and set aside.
Chocolate Ganache Preparation
  1. In a double boiler, heat the heavy cream until it begins to simmer.
  2. Remove from heat and add the chopped chocolate. Stir until smooth and glossy.
  3. Pour the ganache over the assembled cake, allowing it to drip down the sides.
