Ingredients
  

Dry Ingredients
  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1/4 cup unsweetened cocoa powder
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
Wet Ingredients
  • 1 large egg beaten
  • 1/2 cup milk can use almond or soy milk
  • 1/4 cup vegetable oil
  • 1 teaspoon vanilla extract
Add-ins
  • 1 cup chocolate chips semi-sweet
  • 1 cup fresh or frozen cherries pitted and chopped

Method
 

Preparation
  1. Preheat the oven to 350?F (175?C) and line a muffin tin with paper liners.
  2. In a mixing bowl, whisk together the dry ingredients: flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. In another bowl, combine the wet ingredients: beaten egg, milk, vegetable oil, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
  5. Fold in the chocolate chips and chopped cherries.
Baking
  1. Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full.
  2. Bake in the preheated oven for 18-20 minutes or until a toothpick inserted into the center comes out clean.
  3. Allow the muffins to cool in the tin for 5 minutes before transferring to a wire rack to cool completely.
