Ingredients
  

Chicken Marinade
  • 1 pound boneless, skinless chicken thighs cut into strips
  • 3 tablespoons olive oil
  • 2 teaspoons dried oregano
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 lemon juiced
Tzatziki Sauce
  • 1 cup Greek yogurt
  • 1 cucumber grated and drained
  • 2 cloves garlic minced
  • 1 tablespoon olive oil
  • 1 tablespoon fresh dill chopped
  • 1 tablespoon lemon juice
  • 1/2 teaspoon salt
Gyro Assembly
  • 1 cup mixed greens for garnish
  • 1 tomato sliced for garnish
  • 1 small red onion sliced

Method
 

Prepare the Chicken
  1. In a mixing bowl, combine olive oil, oregano, garlic powder, paprika, salt, pepper, and lemon juice. Add chicken strips and marinate for at least 30 minutes.
  2. Preheat the grill to medium-high heat. Grill the marinated chicken for about 5-7 minutes on each side or until fully cooked.
Make the Tzatziki Sauce
  1. In a bowl, mix together Greek yogurt, grated cucumber, minced garlic, olive oil, dill, lemon juice, and salt until well combined. Refrigerate until ready to serve.
Assemble the Gyros
  1. Warm the pita bread on the grill for a minute. Place grilled chicken on the pita, top with tzatziki sauce, mixed greens, tomato slices, and red onion. Roll up and serve.
