Ingredients
  

Crust
  • 1 cup all-purpose flour
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter softened
  • 1/4 teaspoon salt
Filling
  • 2 cups fresh or frozen cherries pitted
  • 1/2 cup granulated sugar
  • 2 tablespoons cornstarch
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon juice

Method
 

Prepare the Crust
  1. Preheat the oven to 350?F (175?C). In a mixing bowl, combine flour, sugar, butter, and salt. Mix until crumbly.
  2. Press the mixture into the bottom of a greased 9x9 inch baking pan.
  3. Bake for 10 minutes, then remove from the oven.
Make the Filling
  1. In a saucepan over medium heat, combine cherries, sugar, cornstarch, vanilla extract, and lemon juice.
  2. Cook until the mixture thickens and starts to bubble, about 5-7 minutes.
Assemble and Bake
  1. Pour the cherry filling over the pre-baked crust, spreading it evenly.
  2. Bake for an additional 20 minutes or until the filling is bubbly and the edges are golden.
  3. Allow to cool before slicing into bars.
