Ingredients
  

Pasta
  • 12 oz fettuccine or pasta of choice
Cauliflower Alfredo Sauce
  • 1 head cauliflower cut into florets
  • 2 cups vegetable broth
  • 1 cup nutritional yeast for cheesy flavor
  • 2 cloves garlic minced
  • 1 tbsp olive oil
  • 1 tsp salt to taste
  • 1/2 tsp black pepper to taste
Spring Vegetables
  • 1 cup asparagus trimmed and cut into 2-inch pieces
  • 1 cup peas fresh or frozen
  • 1 cup zucchini sliced
  • 1 cup spinach fresh

Method
 

Prepare the Pasta
  1. Cook the fettuccine according to package instructions until al dente. Drain and set aside.
Make the Cauliflower Alfredo Sauce
  1. In a pot, bring vegetable broth to a boil. Add cauliflower and garlic, cooking until tender, about 10 minutes.
  2. Transfer the cooked cauliflower and garlic to a blender. Add nutritional yeast, olive oil, salt, and black pepper. Blend until smooth and creamy.
Cook the Spring Vegetables
  1. In a skillet, heat a little olive oil over medium heat. Add asparagus and zucchini, saut?ing for about 5 minutes.
  2. Add peas and spinach, cooking until spinach wilts and peas are heated through, about 3 minutes.
Combine and Serve
  1. In a large bowl, combine the cooked pasta, cauliflower Alfredo sauce, and spring vegetables. Toss to coat evenly.
  2. Serve warm, garnished with additional nutritional yeast if desired.
