Ingredients
  

Vegetables
  • 4 cups shredded green cabbage
  • 1 cup shredded carrots
  • 1 cup diced ripe mango
  • 1/2 cup chopped red bell pepper
Dressing
  • 1/4 cup lime juice freshly squeezed
  • 2 tablespoons honey or agave syrup for vegan option
  • 2 tablespoons olive oil
  • 1 teaspoon salt to taste
  • 1/2 teaspoon black pepper freshly ground
Garnish
  • 1/4 cup chopped fresh cilantro optional

Method
 

Prepare the Vegetables
  1. In a large mixing bowl, combine the shredded cabbage, shredded carrots, diced mango, and chopped red bell pepper.
Make the Dressing
  1. In a separate bowl, whisk together the lime juice, honey, olive oil, salt, and black pepper until well combined.
Combine and Serve
  1. Pour the dressing over the vegetable mixture and toss until everything is evenly coated. Garnish with chopped cilantro if desired.
  2. Serve immediately or refrigerate for 30 minutes to let the flavors meld.
