  • 1 cup fresh blueberries washed
  • 1 tablespoon olive oil for cooking
  • 1 small shallot finely chopped
  • 1 cup beef broth low sodium
  • 1 tablespoon fresh thyme chopped
  • 1 tablespoon balsamic vinegar

Method
 

Prepare the Sauce
  1. In a skillet, heat olive oil over medium heat. Add the chopped shallot and saut? until translucent, about 2-3 minutes.
  2. Add the fresh blueberries to the skillet and cook until they start to burst, about 3-4 minutes.
  3. Pour in the beef broth and bring to a simmer. Add the chopped thyme and balsamic vinegar.
  4. Let the sauce simmer for about 5-7 minutes, or until it thickens slightly. Season with salt and pepper to taste.
  5. Remove from heat and strain if a smoother sauce is desired, or leave as is for a chunky texture.

Notes

This sauce pairs beautifully with grilled steak, but can also be used with chicken or pork. Adjust sweetness by adding a bit of honey if desired.
