Ingredients
  

Crust
  • 1 cup all-purpose flour
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter cold and cubed
  • 1 large egg yolk
  • 2 tablespoons ice water
Filling
  • 2 cups fresh blueberries
  • 1/4 cup granulated sugar
  • 1 tablespoon cornstarch
  • 1 tablespoon lemon juice
  • 1/2 teaspoon vanilla extract

Method
 

Prepare the Crust
  1. In a mixing bowl, combine flour and sugar. Add cold butter and mix until crumbly.
  2. Add egg yolk and ice water, mixing until dough forms. Shape into a disk, wrap in plastic, and refrigerate for 30 minutes.
  3. Preheat the oven to 375?F (190?C). Roll out the dough and fit it into the tart pan.
  4. Prick the bottom with a fork and bake for 15 minutes until lightly golden.
Prepare the Filling
  1. In a bowl, combine blueberries, sugar, cornstarch, lemon juice, and vanilla. Toss gently to coat.
  2. Pour the blueberry mixture into the pre-baked crust.
  3. Bake for an additional 30 minutes until the filling is bubbly and the crust is golden.
Serve
  1. Allow the tart to cool before slicing. Serve with whipped cream if desired.

Notes

For best results, use fresh blueberries. You can substitute with frozen blueberries, but adjust the sugar accordingly.
