Ingredients
  

Crust
  • 1 cup graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter melted
Filling
  • 16 oz cream cheese softened
  • 1/2 cup sour cream
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
Blueberry Topping
  • 2 cups fresh blueberries
  • 1/4 cup granulated sugar
  • 1 tablespoon lemon juice

Method
 

Prepare the Crust
  1. Preheat the oven to 350?F (175?C). In a mixing bowl, combine graham cracker crumbs, sugar, and melted butter. Press the mixture into the bottom of a greased 9x9 inch baking pan.
Make the Filling
  1. In another bowl, beat the softened cream cheese until smooth. Add sour cream, sugar, eggs, and vanilla extract, mixing until well combined.
  2. Pour the filling over the crust and spread evenly.
Bake
  1. Bake in the preheated oven for 30-35 minutes, or until the center is set and slightly jiggly.
Prepare the Blueberry Topping
  1. In a small saucepan, combine blueberries, sugar, and lemon juice. Cook over medium heat until the blueberries start to burst and the mixture thickens, about 5-7 minutes.
  2. Remove from heat and let cool slightly.
Assemble and Chill
  1. Once the cheesecake is baked, pour the blueberry topping over the cheesecake and spread evenly. Refrigerate for at least 2 hours before cutting into bars.

Notes

For best results, use fresh blueberries. You can also substitute with frozen blueberries, but thaw and drain them first.
