Ingredients
  

Vinaigrette Base
  • 1 cup fresh blueberries washed
  • 1/4 cup balsamic vinegar
  • 1/2 cup extra virgin olive oil
  • 1 tablespoon honey or maple syrup for vegan option
  • 1 teaspoon Dijon mustard
  • 1/4 teaspoon salt to taste
  • 1/4 teaspoon black pepper freshly ground

Method
 

Prepare the Vinaigrette
  1. In a blender, combine the fresh blueberries, balsamic vinegar, honey, Dijon mustard, salt, and black pepper.
  2. Blend until smooth.
  3. With the blender running, slowly drizzle in the olive oil until emulsified.
  4. Taste and adjust seasoning if necessary.
  5. Transfer the vinaigrette to a jar and refrigerate until ready to use.
