Ingredients
  

Filling
  • 4 cups fresh blueberries or frozen
  • 1/2 cup granulated sugar adjust to taste
  • 1 tablespoon cornstarch for thickening
  • 1 teaspoon lemon juice freshly squeezed
Crisp Topping
  • 1 cup old-fashioned oats
  • 1/2 cup all-purpose flour
  • 1/2 cup brown sugar packed
  • 1/2 cup unsalted butter melted
  • 1/2 teaspoon cinnamon optional

Method
 

Prepare the Filling
  1. Preheat the oven to 350?F (175?C). In a mixing bowl, combine the blueberries, granulated sugar, cornstarch, and lemon juice. Toss gently to coat the blueberries evenly.
Make the Crisp Topping
  1. In another bowl, mix together the oats, flour, brown sugar, melted butter, and cinnamon until crumbly.
Assemble and Bake
  1. Pour the blueberry mixture into a baking dish. Sprinkle the crisp topping evenly over the blueberries. Bake in the preheated oven for 30 minutes or until the topping is golden brown and the blueberries are bubbling.
Serve
  1. Remove from the oven and let cool slightly before serving. Enjoy warm, optionally with vanilla ice cream.

Notes

For a variation, you can add chopped nuts to the topping or mix in other berries with the blueberries.
