Ingredients
  

Chicken and Marinade
  • 1 lb boneless, skinless chicken breasts sliced into strips
  • 2 tbsp olive oil for marinade
  • 1 tbsp lime juice freshly squeezed
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1 tsp garlic powder
  • 1 tsp salt
  • 1/2 tsp black pepper
Rice and Toppings
  • 1 cup brown rice cooked
  • 1 cup black beans cooked
  • 1 cup corn canned or frozen
  • 1 cup cherry tomatoes halved
  • 1 cup romaine lettuce shredded
  • 1/2 cup avocado sliced
  • 1/4 cup cilantro chopped
  • 1/4 cup sour cream for topping
  • 1/4 cup salsa for topping

Method
 

Prepare the Chicken
  1. In a mixing bowl, combine olive oil, lime juice, chili powder, cumin, garlic powder, salt, and black pepper. Add chicken strips and marinate for at least 15 minutes.
  2. Preheat the grill over medium-high heat. Grill the marinated chicken for about 6-7 minutes on each side or until fully cooked.
Assemble the Bowls
  1. In a bowl, layer cooked brown rice, black beans, corn, grilled chicken, cherry tomatoes, and shredded lettuce.
  2. Top with sliced avocado, chopped cilantro, sour cream, and salsa. Serve immediately.
