Method
 

Preparation
  1. In a mixing bowl, combine the diced apricots, red onion, tomato, jalape?o, and cilantro.
  2. Add the lime juice, salt, and black pepper to the mixture.
  3. Gently toss all ingredients together until well combined.
  4. Let the salsa sit for at least 10 minutes to allow the flavors to meld.
