- 12 oz frozen cheese tortellini
- 1 cup diced carrots
- 1 cup chopped celery
- 2 cups fresh spinach or kale
- 2 tsp dried oregano
- 2 tsp dried thyme
- Salt and pepper to taste
Instructions
- In a large pot over medium heat, add olive oil. Saut? minced garlic, diced carrots, and chopped celery for about 5 minutes until fragrant.
- Add the chicken breasts and pour in enough chicken broth to cover. Season with salt, pepper, oregano, and thyme. Bring to a boil, then reduce to a simmer.

- Remove the chicken, shred it using forks, and return it to the pot along with frozen tortellini.
