Instructions
- Preheat the oven to 350?F (175?C). Rinse and cook lentils in vegetable broth until tender (about 20 minutes). Drain excess liquid.
- In a skillet, heat olive oil over medium heat. Saut? onion, carrots, and bell pepper until soft (approximately 5 minutes).
- In a mixing bowl, combine cooked lentils and saut?ed vegetables. Stir in rolled oats, garlic, cumin, paprika, salt, and pepper.
- Transfer the mixture into a lined loaf pan; press down firmly to shape.
- Bake for about 60 minutes until golden brown and fragrant. Allow to cool slightly before slicing.
