- 2 tsp salt
- 1 tsp pepper
- 2 cups low-sodium beef broth
- 1 yellow onion, chopped
- 3 large carrots, cut into chunks
- 3 medium potatoes (Russet or Yukon Gold), quartered
- 3 cloves garlic, minced
- 1 tsp dried thyme or 2 sprigs fresh thyme
- 1 tsp dried rosemary or 2 sprigs fresh rosemary
