- 1/2 medium red onion, thinly sliced
- 1 ripe avocado, diced
- Juice of 2 limes
- 2 tsp taco seasoning
- 2 tbsp olive oil
Instructions
- Season chicken breasts with taco seasoning. In a skillet over medium heat, heat olive oil and cook chicken for 6-7 minutes on each side until cooked through. Let rest before chopping.
- Chop romaine lettuce and halve cherry tomatoes. Drain black beans and slice red onion.
- In a small bowl, whisk lime juice with olive oil; add extra taco seasoning if desired.
- Dice the cooked chicken and combine all ingredients in a large bowl. Drizzle with dressing and toss gently.
