- 14 oz firm tofu, pressed
- 1 cup bell peppers (mixed colors), chopped
- 1 cup snap peas
- 1 cup carrots, sliced thinly
- 2 tbsp low-sodium soy sauce
- 2 tbsp toasted sesame oil
- 3 cloves garlic, minced
- 2 tbsp freshly squeezed lemon juice
- 1 tsp fresh ginger, grated
Instructions
- Press the tofu for 30 minutes to remove excess moisture.
- In a bowl, whisk together soy sauce, sesame oil, lemon juice, garlic, and ginger. Cut the pressed tofu into cubes and toss in the marinade; let sit for at least 20 minutes.
- Chop the bell peppers and slice the carrots while marinating.
- Preheat the grill to medium-high heat.
- Grill marinated tofu on one side and vegetables on the other for about five minutes per side until slightly charred and tender-crisp.
- Serve hot with any remaining marinade drizzled on top.
