- 2 cups fresh spinach, chopped
- 1 cup quinoa, rinsed
- 1 cup cherry tomatoes, halved
- 1/2 cucumber, sliced
- 1/4 cup red onion, finely chopped
- 1/2 cup feta cheese, crumbled
- 3 tablespoons olive oil
- 2 tablespoons lemon juice
- Salt and pepper to taste
Instructions
- Cook quinoa by combining 1 cup rinsed quinoa with 2 cups water in a pot. Bring to boil, reduce heat to low, cover, and simmer for 15 minutes until water is absorbed. Fluff and let cool.
- While quinoa cools, chop spinach, slice cucumber, halve cherry tomatoes, and chop red onion. Combine vegetables in a large bowl.
- In a small bowl, whisk together olive oil, lemon juice, salt, and pepper to create the dressing.
- Once the quinoa has cooled, add it to the vegetable mixture along with crumbled feta cheese and pour over the dressing.
- Toss gently until well combined and serve immediately.
