  • 1 lb fresh green beans, trimmed
  • 1/2 cup cherry tomatoes, halved
  • 1/2 cucumber, thinly sliced
  • 1/4 cup red onion, finely diced
  • 1/2 cup feta cheese, crumbled
  • 2 tbsp lemon juice (freshly squeezed)
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Rinse quinoa under cold water until clear. In a medium saucepan, combine quinoa with 2 cups water. Bring to a boil, then cover and simmer for 15 minutes or until water is absorbed. Let sit covered for an additional 5 minutes before fluffing with a fork.
  2. Boil salted water in a separate pot. Blanch green beans for 3 minutes until tender-crisp. Immediately transfer them to an ice bath to retain color.
  3. Chop cooled green beans into bite-sized pieces. In a large mixing bowl, combine chopped green beans, cherry tomatoes, cucumber, red onion, and fluff the quinoa.
  4. Add crumbled feta cheese along with lemon juice and olive oil. Season with salt and pepper.
  5. Gently toss all ingredients together until well mixed. Serve immediately or refrigerate for later enjoyment.
