Ingredients

  • 2 cups ripe dragon fruit flesh (about 1 medium fruit)
  • 1 cup full-fat coconut milk
  • 2 tablespoons honey or maple syrup (adjust to taste)
  • 2 tablespoons freshly squeezed lime juice

Instructions

  1. Cut the dragon fruit in half, scoop out the flesh, and chop it into pieces.
  2. In a blender, combine the dragon fruit, coconut milk, honey (or maple syrup), and lime juice. Blend until smooth.
  3. Taste the mixture and adjust sweetness if needed.
  4. Pour the blended mixture into popsicle molds, leaving some space at the top.
  5. Insert sticks and freeze for at least 4 hours until solid.
  6. To remove popsicles easily, run warm water over the outside of the molds.
