- 8 oz soba noodles
- 2 tbsp toasted sesame oil
- 3 tbsp low-sodium soy sauce
- 2 tbsp unseasoned rice vinegar
- 1 clove garlic, minced (optional)
- 1 tsp sugar
- 1 cup bell peppers, thinly sliced
- 1 cup cucumbers, julienned
- 1 cup carrots, thinly sliced
- 2 green onions, sliced for garnish
Instructions
- Cook the soba noodles according to package instructions (about 4-5 minutes). Drain and rinse under cold water.
- While the noodles cool, wash and chop the vegetables into thin strips.
- In a small bowl, whisk together sesame oil, soy sauce, rice vinegar, garlic (if using), and sugar until combined.
- In a large mixing bowl, combine cooled noodles and chopped vegetables. Drizzle half of the dressing over and toss well.
- Chill in the refrigerator for 15-20 minutes to let flavors meld.
- Serve chilled with remaining dressing drizzled on top and garnish with sliced green onions.
