- 1 cup whole milk ricotta cheese
- 1 cup fresh basil leaves, chopped
- 2 cloves garlic, minced
- ? cup freshly grated parmesan cheese
- 1 cup marinara sauce
Instructions
- Preheat your oven to 375?F (190?C) and lightly grease a baking dish.
- Slice zucchinis lengthwise into thin planks (about 1/4 inch thick).
- In a mixing bowl, combine ricotta, minced garlic, chopped basil, half the parmesan, salt, and pepper until creamy.
- Take one zucchini slice and place about one tablespoon of filling at one end; roll gently.
- Place rolled zucchini seam-side down in the baking dish and repeat until all slices are filled.
