- 1 lb lean ground beef
- 4 cups tortilla chips
- 1 cup medium salsa
- 2 cups shredded cheddar and Monterey Jack cheese blend
- 1 can (15 oz) black beans, rinsed and drained
- 1 cup sour cream (or Greek yogurt)
Instructions
- Preheat your oven to 350?F (175?C).
- In a skillet over medium-high heat, brown the ground beef for about 5-7 minutes; drain excess grease.
- Stir in black beans and salsa; cook for an additional 2 minutes.
- In a baking dish, layer half of the tortilla chips, half of the beef mixture, and half of the cheese. Repeat layers.
- Cover with aluminum foil and bake for 20 minutes. Remove the foil and bake for an additional 5 minutes until cheese is bubbly.
- Let cool slightly before serving with dollops of sour cream.
