  • 1 pre-made shortcrust pastry (9-inch)
  • 1 cup whole milk
  • 1 cup heavy cream
  • ? cup granulated sugar
  • 2 tsp pure vanilla extract
  • 4 large egg yolks
  • 2 cups fresh strawberries, sliced

Instructions

  1. Preheat oven to 400?F (200?C). Fit the shortcrust pastry into a tart pan, pricking the bottom with a fork. Bake for 15 minutes until lightly golden.
  2. In a saucepan, combine milk and cream over medium heat until steaming. In a bowl, whisk together sugar and egg yolks, then gradually add warm milk mixture while whisking continuously.
  3. Return mixture to saucepan over low heat, stirring until thick enough to coat the back of a spoon (about 10 minutes). Stir in vanilla extract.
  4. Pour custard into the cooled tart shell and let it set at room temperature.
  5. Once set, top with sliced strawberries and refrigerate for at least 2 hours before serving.
