  • 3–4 lbs chuck roast
  • 1 cup low-sodium beef broth
  • 1 cup jarred pepperoncini peppers
  • 1 oz ranch dressing mix
  • 1 oz au jus gravy mix

Instructions

  1. Preheat your Traeger grill to 225?F (107?C).
  2. Pat the chuck roast dry and rub ranch dressing mix evenly over the surface.
  3. Sprinkle au jus gravy mix over the roast.
  4. Sear each side of the roast in a hot skillet or directly on grill grates for about 3-4 minutes until browned.
  5. Place seared roast on grill grates, pour beef broth over it, and scatter pepperoncini peppers around.
  6. Close the grill lid and cook for 6-8 hours until fork-tender.
  7. Let rest for 15 minutes before slicing and serve with pan juices.
